Made in stainless steel tanks. All varieties are vinified separately. Mace must in contact with the skins. Fermentation at a controlled temperature of 30ºC for eighteen days. The assembly of the three wines obtained is done before they are placed in the barrel.
It remains for 24 months in new French and American oak barrels. Bottle refining for another 24 months.
Pairing
Accompanies roast lamb and piglet, all kinds of stews and cheeses of long duration. Surprisingly its excellent combination with dark chocolate.
